It's Danish or Scandinavian in origin. There are entire books of recipes out there, and lots of variations online, just search for "ebelskiver recipe" and you'll find lots.

I'm sure you would be fine on a flat griddle or pan, it would just be more like a regular flat pancake.

We got our pan at a thrift store for $5 or so. Just keep your eyes peeled for one. There are cheaper, not cast iron, pans as well. And I think people get them as gifts and don't know what to do with them, or they think it's interesting try it once and never touch it again, so it's not uncommon to see them in thrift stores once you know what to look for.

Okay, these look intriguing. And where are they from?

It looks like you would need the pan to make tehm round and puffy, but can you make them on a griddle for a flatter version?

Beautiful pictures, and, as always, a wonderful sense of color.

If Mike makes you as happy in life as you are in these shots, then one-thousand-and-one blessings to you both. Come see me if you ever need a refill.

Definitely worth checking out. Safeway and QFC both carry Bob's Red Mill over here. I will admit to a love/hate relationship with the brand. Wonderful oatmeals, horrid whole wheat chocolate cake mix.

Bob's Red Mill has both (http://www.bobsredmill.com/). I know they sell this brand at QFC, not sure if they have those particular items, but it's worth checking. Trader Joe's for sure sells "almond meal/flour", I haven't checked to see if they have the coconut. If you have a good food processor you might be able to bang coconut flakes into a powder form too.
